Our chardonnay is barrel-fermented in 15% new French oak. Our goal is to produce a wine that shows the tiniest amount of pretty oak spice. It is aged in a barrel (French oak) for 10 months.
It is not stirred to help preserve the fruit flavors in the chardonnay.
The strain of MaloLactic bacteria that performs the malolactic fermentation does not produce a lot of buttery flavor.
The result is a beautiful, round chardonnay that comes across as bright and lively on the palate.
